           Cacao: Feel-good Bean gets the Blood Pumping

Cacao, Theobroma cacao, was a product of the earliest civilizations of Mesoamerica. It was once used as a form of Mayan currency and as a wellness tonic and beverage. The ancient Maya mixed cacao beverages to a frothy delight in elaborate ceramic vases, and flavored their drinks with a myriad of tastes, from honey to chili powder. They used the drinks to toast many things-even culinary genius and good health!

Cacao was named Theobroma by Linnaeus and means “food of the gods.” The tree is generally cultivated on large estates under the shade of other trees and within living forests, so it is unique to ecofriendly and organic agriculture. Cacao trees develop pods, which contain the beans, continuously-they can be harvest regularly as they ripen. Pods are then cut open and the beans, surrounded by a sweet frothy pulp, are allowed to ferment for ease of hulling. The beans are then sun-dried naturally.
